Ep. 11 | Antylia honours culture through culinary and sonic spirit
Something indescribable, yet tangible. Intertwining with all the senses. Focus on what is tasted, felt, heard.
This is Antylia - like explorers anticipating land. Filled with new plants, animals, resources. Minerals, earth and substance. Something untouched, a fresh idea. Without expectation, from creation.





I’m not talking about the phantom island that was reputed to be within the Atlantic Ocean. It’s the name of a new restaurant, a gathering space, in the heart of Toronto’s Bloorcourt neighbourhood.
Born of partners in life, love and culinary affairs, Aldo Camarena-Jimenez and Ashley McKay, these chefs draw from their Mexican and Ecuadorian heritage, while holding cultural reverence and connection to North, South and Central America - always embracing diaspora.




The dishes they prepare are intentional, convergent. The round platters on their turntable mirror the food.
Rooted, euphonic, well-traveled, storied.





In this episode of Sound Travels, Aldo and Ashley dig into the layers of their crates. Serving tracks reminiscent of family gatherings, formative years in LA, Mestizo meditations and enjoying every flavour.
